George Town's signature experience is dinner on the water as the sun goes down over the harbour. The waterfront institutions pair fresh local catch with a view of the cruise ships sliding out to sea, and at least one famous spot still does its nightly tarpon feeding off the deck, which is half the entertainment.

These rooms fill on weekends and cruise evenings, so reserve ahead and ask for a table on the water side. Arrive around 6pm to catch the light.

For a true taste of the islands, seek out the local Caribbean kitchens around town: fish rundown, jerk, oxtail, conch fritters and heavy cake, often farm-to-table and rooted in island tradition. This is the food that tells you where you are, and it is usually better value than the resort strip.

Short on time off the ship? Stay close to the harbour: there are good cafés, coffee and casual seafood within an easy walk of the tender dock, so you can eat well without losing an hour to a taxi. Go early, before the lunch rush peaks around the same time every ship's passengers come ashore.
